I will have a blog post out this weekend that explains the process in more detail but AppInsight for IIS functions really no differently that AppInsight for Exchange. Ensure the node is managed via WMI, click "List Resources", select AppInsight for IIS. When you click on AppInsight for IIS from the "All Applications" resource you will be prompted to configure the server, which is configuring WinRM on the remote host. After that you should be good to go. You can even try it yourself on the server where the SAM beta is installed.
